Earthen pot is porus and has many pores on it. The water oozes out through these pores and evaporates by absorbing heat from surroundings. This heat increases kinetic energy and molecules of water over come the inter molecular force of attraction and water changes to vapour state leaving a cooling effect behind. This cools water inside the Earthen Pot.

The earthen pot is made of clay which is usually nonporous and retains moisture.
But once it is made as a pot , it becomes porous and aerated.
This in turn allows the water molecules to evaporate inturn producing a cooling effect.
EVAPORATION is ENDOTHERMIC and therefore absorbs all the heat and makes the water cool.
