I'm currently watching One Piece and I absolutely love it! Right now I'm waiting for the next episode to come out (I think it's an episode a week? I'm not sure). I'm just curious how behind the anime is. Around how many arcs is the manga ahead?

The anime is actually pretty close to the manga right now, which probably means that after the Dressrosa arc ends, there will probably be a filler arc. The anime is trying to adapt things very slowly so it doesn't catch up with the manga too quickly, and generally they're doing only about one or two chapters per episode at the moment.
To answer your question, the manga is actually still in the Dressrosa arc (so, the manga is less than one arc ahead). It's coming to a close, but the final battle has begun.
To be more specific, the latest episode of the anime, episode 686, covers content from chapter 750. The manga is currently on chapter 782 as of last week. In other words, the anime is only about 30 chapters behind, which is very, very close. As I said, the anime is trying to do about 1-2 chapters per episode by padding it with filler scenes and flashbacks and such in order to maintain that distance. Normally a single episode would cover more.
