The pancreas contains exocrine glands that produce enzymes important to digestion. These enzymes include trypsin and chymotrypsin to digest proteins; amylase for the digestion of carbohydrates; and lipase to break down fats.

Lingual lipase starts the digestion of the lipids/fats. Salivary amylase: Carbohydrate digestion also initiates in the mouth. Amylase, produced by the salivary glands, breaks complex carbohydrates to smaller chains, or even simple sugars. It is sometimes referred to as ptyalin.
Digestive enzymes found in the mouth include: Lingual lipase. This enzyme breaks down triglycerides, a kind of fat. Salivary amylase.
