Baking powder is mixed with the flour. When water is added to this flour to make dough, baking powder undergoes a chemical reaction during which carbon dioxide gas is produced. This carbon dioxide gas gets trapped into the dough and bubbles out which causes the cake to rise making it soft and spongy.
Baking powder is substance formed when a mild edible acid such as Tartaric acid reacts with bakibg soda(NaHCO3). When Baking powder is heated:
NaHCO3 + H+ -----> CO2 + H2O + Sodium Salt
Here the CO2 gas evolved helps in rising of cakes and breads while heating and helps in making them soft and spongy.
