Because each plants need different kinds of soil as some are rabi plants and some kharif
Wheat is grown in loamy soils as it does not need much water (though it needs water but not like rice crops)
Whereas:
Rice needs alluvial soil because it needs more and more water continuously and alluvial soil has the capability to hold water for a long time.
Therefore different crops need different soils depending on the type and amount of nutrients and water needed by them
