There is a flap valve inside the nozzle, and when the petrol gets to that level it closes, and the increased pressure is sensed in the bowser and causes the supply to cut off.
the pump stops pumping because their is a flap in the nozzle that closes when it is submerged in gasoline.
some pumps are electrically operated and others mechanically either way its usually regulated by pressure.
The nozzle is designed to sense when the filler pipe is full and then shuts off. This is why having the vent hose kinked or otherwise plugged, you have to put the gas in v...e...r...y, v...e...r...y, s...l...o...w...l...y.
